What is Soy Lecithin?
Lecithin is term used to denote a variety of naturally occurring fatty compounds found in animal and plant tissues composed of choline, fatty acids, glycerol, glycolipids, phospholipids, phosphoric acid and triglycerides lecithin was originally isolated from egg yolk. It is regularly extracted from cottonseed, marine sources, milk, rapeseed, soybeans, and sunflower. It is usually used as a liquid but also can be purchased as granules. Soy lecithin (also marked as E322) is extracted from soybeans either mechanically or chemically using hexane. Soy lecithin consists of three types of phospholipids; phosphatidylcholine (PC), phosphatidylethanolamine (PE) and phosphotidylinositol (PI).
